Un-beet-lievable Beet, Kale & Feta Salad

Makes enough for 4 people


  • 6 medium beets or 4 large beets
  • 1/4 cup minced red onion or green onions
  • 2 tbsp finely chopped fresh parsley
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp red wine vinegar
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped black kale
  • Salt & Pepper to taste


  1. Preheat the oven to 400 degrees F
  2. Wrap the beets individually in tin foil and bake in oven for 45 min. Once beets are done and cooled, cut them into ½ inch cubes
  3. While the beets are roasting, whisk together the onions, parsley, olive oil, vinegars and kale in a bowl and season with salt & pepper to taste, then set aside
  4. Once the beets have cooled cut them into bite size pieces, pour the vinaigrette over the beets and add the goat feta before serving
